October 16th, 2011

Day 2!!

Good idea on posting breakfasts for this first week!  How is it going so far? I know it's only Day 2 but Saturday night with out a snack watching movies can be hard!!! Post breakfast and if you want to post any recipes post them to the Recipes Blog.

Breakfast is the same as yesturday! Zuccini, sweet potato and red pepper fritatta with bacon. Still very adventurous compared to last time.

Yesturday went well for me! However it was hard at 9 pm when I hadn't eaten dinner yet and was not really prepared for it. I had a little meltdown because I was hungry and thought I would have to just eat whatever but Caleb rocked! He thought of something easy and Paleo for us to eat--Taco Salad!!

Yesturday was a success so today I am excited to start off and have the same great day but even better as I had yestruday!!

I had a great day yesterday too. Turned down the special coffee at Luxe Spa and replaced it with water. My hair looks great BTW.

I found the great website that Jen mentioned and joined. Mark's Daily Apple. He has good Paleo recipes.

Just making Mini Quiche from my Everything Paleolithic Diet Book. This is a great meal to save in the fridge and have for a couple of days in a row.

6 large eggs
6 slices nitrate free bacon
1/2 cup broccoli
1/2 cup mushrooms
1/2 cup onions
1/2 peppers

1. Preheat oven 325. Lone muffin tin with 8 foil cups
2. Whisk 6 eggs
3. Cook bacon, drain and cut into 1/2" pieces
4. Sauté remaining ingredients
5. Pour eggs into foil cups fillings 2/3 of the way
6. Add bacon and veggies to each
7. Bake 25 minutes or until golden brown

You can do variations on the veggies and bacon. I added some sausage to mine this morning.
